A food scale is the most accurate way to know how much you're eating, but it's not the only way, and it's definitely not the only way that works. Most people who track food long-term stop weighing everything within a few weeks — not because they got lazy, but because eyeballing, done right, gets you close enough to matter without turning every meal into a lab experiment.

The goal isn't perfection. It's consistency. Being within 10-15% of your actual portion, meal after meal, beats a scale you use twice and abandon.

Your hands are already calibrated to you

The reason hand-based portioning works better than most people expect is that hand size roughly scales with body size, so the estimate adjusts to you automatically. It's a rule of thumb, not a lab measurement — but it's a genuinely useful one:

Eyeballing works well for whole foods with obvious boundaries — a piece of meat, a scoop of rice, a handful of nuts. It gets shakier with calorie-dense liquids and mixed dishes: cooking oil, salad dressing, sauces, smoothies, and anything simmered in a pot where the ingredients have blended together.
